Fresh Oregon Strawberry Jam

1 tsp vanilla
1 pint fresh local strawberries
1 Tsps. Wildflower Honey
1/4 tsp. cinnamon
1 1/2 cups of water
1 tsp coconut oil

wash, trim and slice the strawberries. add to small pot, along with the rest of the ingredients. bring to a boil and then simmer/on a low boil until the water is reduced and the berries are the consistency of a jam .. about an hour, stirring occassionally so that the jam doesn't burn.


this smells incredibly good and tastes great as well. i ate it by the spoon. sure there's half left in the fridge. but not for long.

i love to cook ... great smells and tastes. i really enjoy feeding myself. and i'm finding it's lots of fun going to the market and discovering what's seasonally fresh from the local markets. here in portland, i shop at a local co-op and new seasons, a supermarket i'm so impressed by. it's a quality, exceedingly friendly, and socially conscious company with their heart in the right place. they have an understanding of the bottom line that i appreciate and respect.
