Millet and Lentils

ingredients:*

millet
lentils (washed)
walnuts
raisins
indian curry powder
caradamon
onion
sea salt
coconut oil

apricot
pumpkin seeds
sea salt
brown sugar
cinnamon
indian curry powder
coconut oil


* use qtys. that please your senses. unsure? embrace the concept of pleasing your self and flow with your nose and taste buds.

the millet/lentils:

sautee onion in coconut oil. add curry powder, raisins and cardamon. stir and coat with the oil. add lentils, sea salt, and walnuts. stir also to coat. add millet and water (check ratios). stir. cover.

the chutney:

chop apricots (or any other fruit that's unfit to eat) (but of course fit to cook) *shees, and sautee in coconut oil. add brown sugar to taste. pumpkin seeds, a little bit of salt to taste, the spices. stir. added water. stir. and sautee until cooked.

Kale with tofu

1 head of kale per person (*it's healthy yo')
one small onion, chopped
a few tablespoons of olive oil
1/2 tsp fresh grated ginger
a little bit of fresh lime
a pinch or two of salt
1/4 of a tub of firm tofu


wash kale well.
sautee onion in pan
derib the kale and disregard the ribs
add handfuls of kale; cooking one batch at a time.
add salt
continue adding fresh kale and cooking it down; the point is that it all becomes wilted

it takes some time; which i dig because it enabled me to sit and chill in the kitchen a bit. and nibble a bit on some of the kale that already had cooked through.

when the kale's mostly done, add the tofu, ginger and lime. brown the tofu a bit and serve up.

delicious whole grain pancakes

mix whole grain pancake mix with water, use a mix to water ratio that produces a consistency that pleases you. add one - two over riped mashed bananas.

heat up in a skillet/pan, a Tsp. of coconut oil.

add quarter a handful of frozen blue berries and cranberries, and some pumpkin seeds. heat 'em up in the skillet on med-high.

add 1/2 cup batter, sprinkle with pumpkin seeds and a Tsp of brown sugar. cover with lid. wait i guess 3-5 minutes. to cook through.

flip pancake.
add anotha tsp of brown sugar
cova.

wait. 3 min or so.

serve up.
eat.



smells devine. tastes devine. the seeds taste great when they're covered a bit in the brown sugar and have been cooked up a little in the coconut oil. for those of us who aren't into coconut, i think grapeseed or flax oil could work well.

Oatmeal

i've got an edge, i said to dale.
it's normal he said. people get an edge when they're under stress or pressure.
ah ... . i replied. that makes total sense.




this is the best damn oatmeal i've ever had, let alone made:


oatmeal
water
1/4 tsp pumpkin spice
tsp or two of vanilla
cup of berries (blueberries and cranberries), frozen or otherwise
Tsp or two of brown sugar

prepare. eat some with vegan margarine. refridgerate rest.

next morning.
brown ripe bananas in coconut oil.
add the oatmeal.
add 1/4 cup of vanilla soy

bring to boil.
take off the heat.
spoon into a bowl.
allow to cool a little.
eat,
cherishing every bite.

Muffins

Ingredients (organic) ...

.... for the Simple & Basic

2 cups of rye flour
2 Tsp. baking powder
¼ tsp sea salt
4-6 Tsps. Brown Sugar
½ cup oil
3 Tsps soy milk powder mixed in with 8 ounces of water
3 Tsps. nutritional yeast

light, moist and sweet.
makes 6 large muffins


.... for another version of the Simple & Basic

1 cup of rye flour
1 Tsp. baking powder
1/4 tsp sea salt
1-2 Tsps. honey
½ cup oil
4 Tsps. nutritional yeast
1 cup of soy milk cut with 1 tsp of vinegar

bake at 400 degrees for 25 min.
dense, moist and sweet.
makes 4 medium sized muffins


... for Simple & Basic, with walnuts and raisins

2 cups of flour (3 parts rye, 1 part buckwheat)
3 T baking powder
1/4 tsp sea salt
4 Tsps. Brown Sugar
½ cup oil
3 Tsps soy milk powder mixed in with 8 ounces of water
3 Tsps. nutritional yeast (optional)
raisins (as much as you prefer)
walnuts (as much as you prefer)
1 tsp. vanilla

dense, moist and sweet
makes 6 large muffins


for Delicious Chocolate
2 cups of flour, chose what works well for you.
2 Tsp. baking powder
¼ tsp sea salt
6 Tsps. Brown Sugar
1/2 cup Chocolate powder to taste
1 cup oil
3 Tsps soy milk powder mixed in with 8 ounces of water




The How To
Mix dry ingredients well. Make well in center of the dry ingredients. Add the liquid ingredients. Stir well until smooth.

Batter goes into ungreased muffin pan. Place into 350 degree preheated oven and bake for 25 min. or until the muffins pass the toothpick test.
