Sautee the garlic .... I used about 8 cloves and mashed them a little bit and then sauteed them in a few tablespoons of canola oil). Add the onions, about 1 medium to large onion chopped. Sautee. Slice the carrots and add to the pot. Rinse and add about 2 cups of split peas, also to the pot. Add salt to taste, 1 - 2 teaspoons. And water. Bring to a boil and then reduce heat and simmer for a while.
I filled my pot up with water and then allowed it all to reduce down.
It was surprisely simple yet good. Next time, I'd add some herbs. And maybe some celery.

garlic spears
chopped garlic spears and sauteed with a few minced garlic cloves in a few Tsps. of olive oil. added 1/2 cup of sprouts, tofu, torn basil leaves, left over brown rice, and 1/4 tsp of chopped jalapeno. all sauteed a little while longer.
Fresh Oregon Strawberry Jam
1 tsp vanilla
1 pint fresh local strawberries
1 Tsps. Wildflower Honey
1/4 tsp. cinnamon
1 1/2 cups of water
1 tsp coconut oil
wash, trim and slice the strawberries. add to small pot, along with the rest of the ingredients. bring to a boil and then simmer/on a low boil until the water is reduced and the berries are the consistency of a jam .. about an hour, stirring occassionally so that the jam doesn't burn.
this smells incredibly good and tastes great as well. i ate it by the spoon. sure there's half left in the fridge. but not for long.
i love to cook ... great smells and tastes. i really enjoy feeding myself. and i'm finding it's lots of fun going to the market and discovering what's seasonally fresh from the local markets. here in portland, i shop at a local co-op and new seasons, a supermarket i'm so impressed by. it's a quality, exceedingly friendly, and socially conscious company with their heart in the right place. they have an understanding of the bottom line that i appreciate and respect.

Lime, Peanut & Jalapeno Chocolate Oatmeal
fresh lime juice (1/4 of a lime)
lime rind, grated
jalapenos, finely grated or diced (1 Tsp)
sea salt, a pinch
oatmeal
1/4 cup peanuts or less ... to your taste
cocoa powder to taste (1-2 Tsps)
soy milk
water
brown sugar to taste (1 -2 Tsps)
1 tsp vanilla
add all ingredients to a pot, bring to a boil, stirring frequently. cover and simmer for about 15 minutes.
